Holiday Pumpkin Parfait-Recipe

taken from  Recipes foe Life after Weight Loss Surgery
by Margaret M Furtado and Lynette Schultz

Ingredients:
1 cup pumpkin puree
1 pkg sugar free instant vanilla pudding
2 cups cold nonfat milk (I use 1%)
1 teaspoon cinnamon
1 teaspoon allspice
1/2 teaspoon vanilla extract
6 tablespoons non-fat whipped cream topping
6 cinnamon sticks
1/2 teaspoon ground nutmeg

In a medium mixing bowl combine the pumpkin puree, pudding mix and milk, add the cinnamon, allspice and vanilla and mix thoroughly

evenly spoon the mixture into 6 parfaitr or martini glasses
chill in the refrigerator for about 30 minutes until the mixture sets
place one tablespoon of whipped topping on each parfait.
garnish with a cinnamon stick and nutmeg....


i'm going to try this for thanksgiving dessert for those that want a lighter dessert from traditional fare...

Thanks for posting this.  I made something similar when I was in WW a while back....it's very tasty.
