Tofu Salad Sandwich
- 1/4 lb. tofu, mashed with a fork
- 2 Tbs. grated Parmesan or Romano cheese
- 2 Tbs. mayonnaise
- 2 Tbs. ground mustard
- 2 tsp. butter, softened
- 4 cheese slices
- 4 lettuce leaves
- 8 slices whole grain bread
Combine first 5 ingredients in a bowl. Spread on half the bread slices. Top with tofu salad mixture, cheese, lettuce, and remaining bread halves.
Option: For a hot sandwich, combine first 5 ingredients and microwave on High for one minute before spreading.
