Cottage cheese.  Mashed sweet potatoes with Splenda.  Panera Tomato soup.  Baja Fresh Chicken Tortilla soup blended up.  Yogurt --- Yoplait Creme Caramel flavor (I know, sugar!)  Occasionally mashed potatoes with cheese.  Spaghetti in a blender. 

The sky's the limit!  If you can blend it, eat it.

So far I have enjoyed fat free refried beans with a smidge of non-fat cheddar, non-fat sour cream and hot salsa - I had it for dinner last night and lunch today.

My NUT recommended laughing cow light wedges - 3/4oz wedges and 2.5 g of protien.

I had cottage cheese with a mashed strawberry and a pack of sweetener this morning.

I'm trying the shrimp salad tonight.

Egg salad.

Soft scrambled eggs with a smidge of part skim ricotta or goat cheese...OMG goat cheese...yum

All suggestions I've either gotten here or from my NUT.

She also gave a carnitas recipe that I'm going to try when I go back to textured foods with a low carb tortilla...

Instead of the sour cream topping, try a dollop of plain Greek yogurt.  Tastes JUST like sour cream and is PACKED with protein.

Can't wait to try your carnitas!!!!

I'm going to try the greek yogurt on the next shopping trip.  Bob went with me and nearly had a coronary when I picked it up and he saw the price.  Next time I go I can sneak it in...LOL.  He won't be with me.  If I had been allowed to drive, I would have gone by myself!  LOL
