Early Out Easy Chicken Casserole

Ok I made this tonite.  it was easy, not too long and I think it will keep well with leftovers.

I still can't have tomato products (as per my doctors protocol) so I'm trying to come up with interesting dinner ideas tonites was EARLY OUT CHICKEN  (I am 5 weeks out tomorrow DH is 10 weeks out tomorrow)

10 oz chicken breasts (could be more but ours are packaged in 5 oz packages)
1 box frozen chopped spinach
1 can healthy choice cream of mushroom soup
1 can navy beans

preheat oven to 350

1. cook spinach and drain
2. rinse beans
3. cut up chicken breasts into bite sized pieces
4. mix spinach, beans, chicken and soup together (a 8x8 pyrex baking pan worked perfectly)
cook for about 1 hour or until chicken is done

Nessa this sounds yummy!!!!!! I dont like beans but maybe I could pick them out, I'm always trying to find new recipes to make....I love cooking dinner

well I used beans instead of rice since we can't have rice yet. if you use rice increase the water to help it cook. or used already cooked rice.

instead of beans put mushrooms or another veggie. or put the beans in that don't have much taste. those white beans. sounds like a good easy recipe :)

This sounds really delicious.  I'm going to have to try this.  Are you still having your pouch party on the 7th?  I'm planning to attend.  I'll let you know if I'm bringing a guest.  What can I bring?

Yes I am.  Folks bring nothing.  Nik handles it all.  we just ask for 5 dollars per person to help defray the cost.
