Pumpkin Pie for Bariatric Patients

Pumpkin Pie

Vanilla Cream Pudding/Shake Mix 1 pkt
Diet Bread, rolled thin, toasted 1 slice
Summer Squash, peeled, chopped, cooked ½ cup
Pumpkin Pie Spice ¼ tsp
Artificial Sweetener 1-2 pkts
Egg 1
Cottage Cheese, 1% fat 2 oz
Water 4 oz
   

Place diet bread in a small baking dish. Preheat oven to 350°. Blend remaining ingredients until smooth. Pour over crust and bake 10 15 min. or until solid.

Calories: 279, Protein: 30g, Carbohydrate: 25g, Fat: 8g, Fiber: 2.5g

Exchanges Per Serving
Meat 2, Starch ½, Veg 1, Milk 1

***Seems easy enough maybe even I could do this one.............MAYBE! lol But I dont know about diet bread! LOL***

Not yet but I love to try new things. I am wanting some treats right now. lol I think I will make some No sugar added hot chocie lol ;o)~
