For The Maryland Crab Lovers! Crab Stuffed Mushrooms

I'm actually starting to get excited about good foods that are actually much healthier than the usual recipes. Just wanted to share.  I am putting a recipe book together with lots of my favs that has substitutes for many high fat and calorie dishes that taste so yummy.  Now the subs aren't going to be perfect but for less fat and calories, they'll be pretty darn close!

  Crazy-Creamy Crab-Stuffed Mushrooms

(Entire recipe: 135 calories, 3g fat, 975mg sodium, 12g carbs, 2g fiber, 4g sugars, 16g protein = 3 Points)

 

These make both an awesome appetizer and a hot 'n cheesy snack!

 

Ingredients:
12 small-to-medium-sized (1 - 2" wide) brown mushroom caps (stems removed)

2 oz. drained white crabmeat

2 tbsp. celery; minced

2 tbsp. red pepper; minced

1 wedge The Laughing Cow Light Cheese (any Light flavor)

1 tbsp. fat-free sour cream

1 tbsp. fat-free cream cheese

2 tsp. fat-free cheese flavor sprinkles (like the ones by Molly McButter)

 

Directions:

Preheat oven to 375 degrees. Wipe mushrooms clean with a damp paper towel and then dry them. Place with the rounded sides down on a baking dish sprayed lightly with nonstick spray. Combine all other ingredients and stir until well mixed. Evenly distribute crab mixture among the mushroom caps. Place in the oven for 10 - 12 minutes, until hot. Enjoy the creamy, crab-tastic goodness! Makes 12.

Whenever I have a gathering of OH people, I try to make sure that we have wls-friendly, yet great tasting food!  What's the point of throwing a party if half of your guests can't eat what you're making?

I'm always on the lookout for good appetizer recipes - thanks again!

Mmmmm....that sounds yummy although I think I'd sub real cheese for "fat-free cheese flavor sprinkles".  Somehow that doesn't sound very appetizing.  LOL!

Thanks for sharing...I love a good WLS-friendly recipe!  And I love to cook!

Hi Robin,

Unfortunately Tia has officially hung up her Julie the Cruise Director hat.  And I can't say that I truly blame her.  It's quite often a thankless job. 

SO...if anyone else is willing to step into her shoes and do so...please, by all means, plan something!  Go on...you can do it.

I would but with my travel schedule always shifting and changing on a moments notice, that just wouldn't be fair to everyone else.
