Servings Ingredients 2 cup Pumpkin, canned, unsalted (not pumpkin pie filling)
1 tbsp honey
2 tsp ground cinnamon
2 tsp fresh lemon peel
1 cup fat free ricotta cheese

 

Directions 1 Mix together the pumpkin, honey, cinnamon, and lemon peel in a bowl.
2 Fold the mixture into the ricotta cheese.
3 Place in the refrigerator and let chill for 1 hour. Serve.

Me tooooooooooooo. I took a few bites of the DD Pumpkin muffin and tolerated it well BUT I dont want the sugar that is in it so I was looking for healthier ways to get my Pumpkin fix. lol
I hope you tolerate it honey. :o)

Really? AWESOME!! My hubby is getting the stuff to make it for me tomorrow.

I want some NOW! I never even thought about cool whip on it...YUM I love me some Cool Whip.

Don't know what your taste buds are like, but I also added a few packets of regular Splenda, about a teaspoon of brown sugar splenda and a dash of vanilla.  It needed to be sweetened up just a bit.  This time of year I crave pumpkin and all the spices!!
