Angel Food Ice Cream Cake

Angel Food Ice Cream Cake

Ingredients:
One Angel food cake (8 inches)
1/2-gallon sugar-free vanilla ice cream slightly softened
2 quarts fresh strawberries
Sugar substitute to taste

Directions:
Cut the cake in half; tear one half into small pieces and set aside. Cut the other half into 12-14 thin slices; arrange in the bottom of a wax paper lined 13" x 9" x 2" baking pan, overlapping as needed.

Spread softened ice cream over cake, pressing down to smooth. Gently press the small cake pieces into the ice cream. Cover and freeze.

Just before serving, slice strawberries and sweeten to taste. Cut dessert into 12 to 14 squares and top with strawberries.

**I have not made this but my girlfriend Cindy has who is almost 18 months post op. This is what she had for her birthday and tolerated it well. She got it from a diabetic recipe website. Im still too scared. I had some cheesecake packed with protein and low in fat though for my bday lol ;o)**

Most Angel Food Cake is sugar free. I know the ones at Giant and Wal*Mart are sugar free honey.

I make angle food cake and did use regular sugar and it was a lot lol but now i use splenda works like a champ

it does but you can get  sugar free angel food cake at some stores.  I've seen it.

I have never had Angel Food Cake with sugar in it not even before surgery. The sugar free ones taste better. IMO. But I have not had ANY since surgery. Im not brave YET! lol I cant even tolerate bread yet. lol

Just make sure you read the label.  Most angel food cake is not sugar free!  Fat free usually means more sugar, if you can believe it!

I never ever have bought angel food cake with sugar in it. I think it has a strange taste with sugar even before surgery. Wal*Mart and Giant carry the sugar and fat free ones and they are a great treat!!! ;o) And oh sooooooooooo YUMMY!
