For those that like Chicken and Feta

We make a dinner called 'greek chicken'   It's a hot dish.  And it's very changable.

I start with  boneless skinless chicken breasts
cut them up and sautee them in a tiny bit of olive oil (or canola) with some crushed garlic
add some chopped onions and green peppers when done
cook a bit longer
add a jar of NSA marinara or spaghetti sauce
add a can of sliced black olives drained
cook a bit.
I also add some cooked drained chopped spinach  (or fresh would work too)
then add as much crumbled feta as you like.  we use at least a cup for 3 chicken breasts

if you want you can serve this over or mixed with a nice whole wheat pasta or just by itself.

it also makes GREAT leftovers.

Thanks Nessa. :o) I will have to get Mikey to try and make this. We always use whole wheat pasta ;o)
