GREEK CHICKEN SALAD

I shared some of my lunch with a co-worker today, and she just stopped by to give me two thumbs up, so I thought I'd share.  Be forewarned, if you don't like feta, this ISN'T the recipe for you!

Rotisserie chicken breast
Cucumbers
Tomatoes
Black olives
Red onion
Feta cheese

Use as much or as little of each as you like.  Cut everything up in bite sized pieces, sprinkle liberally with Greek seasoning (sold in the spice aisle), and refrigerate for at least an hour to let the flavors meld.

I usually pull mine out of the fridge about 30 minutes prior to lunch to let the feta soften.  You can also use shrimp, which is equally awesome!

It IS Carol, and if you buy the pre-cooked chicken or shrimp, it's SOOOO easy!!!

Tia, I have never tried feta cheese. I am sure it is good. Maybe one day I will be brave and try it. Thanks for sharing..

Feta is very, very pungent, the way blue cheese is.  Although I love it by itself, it's so strong that for a virgin like yourself (LOL), you'll want to try it mixed with something like tomatoes or cucumbers.

I always tell KB (and now Darla), "It's good to try new things!" LOL!!

This sounds great! It reminds me of a gyro but with chicken & minus the flat bread!
Definitely a keeper!

I must have Greek blood, Hojo, because I just drool at the mention of Greek food!!  I'll be planning a get-together at my fave Greek restaurant when I get back - hopefully, it'll be one you can make it to!

How are YOU doing?  I'll be down your way starting Saturday, you know!
