Coconut muffins
Okay, so they only have 7 or 8 grams of protein each, but the good news is that they HAVE 7-8g protein. Next time I may add more greek yogurt.
¾ cup buttermilk multi-grain pancake mix ¼ cup vanilla protein powder
¾ cup greek yogurt 2 eggs ½ c. splenda brown sugar mix 10 packets splenda 4T Trader Joe’s Light Coconut Milk 2T oil 1t vanilla 2T melted butter 1 to 1½ cups coconut (sweetened or unsweetened) Preheat oven to 350, spray your muffin pan with cooking spray, mix all the ingredients, and pour into muffin tin…made 9 regular sized muffins (not overly large at all).
My blueberry ones were similar but instead of coconut, I used 1c. blueberries.

Nope none at all.... lol And the closest trader Joes to me is where I was working in Silver Spring, MD Well there is one in Fairfax, VA but it takes the same amount of time to get there too. lol
