Hi Mellie -

Since I think my Mom's salads are the best, I let her make them - although I make mine the same way, they never taste as good, ya know?

Tuna - Albacore is sometimes too dry for me, but we don't use store brands, only name brands - Miracle Whip and finely chopped onion and celery.  That's it.  I DON'T like anything sweet like pickles or relish in my salads.

Egg - Mayo (mustard, too, if I want that deviled egg taste), celery and onion.

Chicken - Mayo (ALWAYS mayo), celery and onion.  SOMETIMES, I like to be adventurous and put in chopped pecans and craisins (dried cranberries).  I use canned chicken, home cooked chicken or store bought rotisserie chicken.

I rarely eat sandwiches, because I rarely eat bread (my pouch doesn't like it all the time), but if I do, it has to be well toasted bread (doesn't matter the kind, but usually wheat).  I like any salads with Triscuits or Wheat Thins, but I'm trying hard to stay away from the carbs, so last week, I made chicken salad and ate it off of thick cut cucumber slices for the crunch.

The only thing I would add to any of these is cheese, and then really only for the addition of protein!
