Need suggestion
Thanks for all the suggestions guys. Guess I just need to get out of the mind set that I have to have breakfast food for breakfast.
I'd love to have that recipe for crab and feta quiche metioned above. And one question does quiche freeze well, if I'd make it and break it out to individual servings?

I usually make one or two quiches on Sunday and they last all week. I actually haven't tried freezing them, although I think they'd freeze well. Normally, one quiche is good for Monday-Friday breakfast/lunch/dinner. If you wanted to, you could add a salad alongside of it for a more filling meal, but I usually don't have room.
You could also bake them in muffin tins - just spray with non-stick cooking spray and bake per usual.
