we are going to a friend's house for a party.
I am making my infamous pasta salad which is more veggies than pasta and made with whole wheat rotini.

not really WLS friendly but very healthy!

What type of veggies do you use and what about the dressing?

I'm going to make a not so healthy cheese tortellini artichoke salad

i use:
radishes
brocoli
green pepper
red onion
black olives
carrots
scallions
cucumber

dressing
low fat mayonaise mixed with low fat Italian dressing and parmasean cheese...

We're going to my uncle and aunt's house for the annual family get together.  It's nothing huge though; just my parents and the 4 of us and my cousin and her family.  They'll have the slip and slide set up for the little kids (and those brave adults), the sprinkler ring, and ladder ball!  I've been asked to make my potato salad and I will make little "hamburgers" out of Nilla wafers (the bun), grasshopper cookies or peppermint patties (the burger), held together with red (ketchup) and yellow (mustard) cookie frosting, then topped with sesame seeds.  They are SO realistic looking.  I'm hoping that there will be foods that I can actually eat!  There is usually chicken and deviled eggs so that's probably my best bet.  I'm not sure that my tummy can handle a hamburger patty yet.  I hope you have a great holiday whatever you plan on doing!

Happy 4th, Ren!!!

We're cooking out at my brother's on Sunday - hopefully, his pool will be ready to go by then!

I'm making Greek shrimp salad - shrimp sauteed in olive oil and Greek seasoning, with chopped cukes, red onion, tomato, feta and Samos's Greek dressing!  YUMMY!!!!  It's good eaten in whole wheat pitas, too!
