food for the beach

I was thinking about making a big bowl of chicken salad. Does everyone like it? What do you like to eat it on?

Also, I left down there some corn tortillas and shredded cheese and some green pepper jelly which I will get some cream cheese and wheat thins.

I'm also thinking some sugar free/glutenfree peanut butter cookies.

I bet I am the ONLY person in the world that does not like chicken salad... I know i'm weird. I also can do without potato chips.  how unamerican.

Hi Gail!!!

I love chicken salad - plain, on crackers, on toast (I can't really do bread), on a sexy naked man...(holy mother of God, did I type that????).

I'm bringing the crab quiche and a feta, tomato & onion quiche and a baked ricotta.  The baked ricotta is sweet, so we can use it for dessert and/or breakfast.

Boxer is bringing some fresh fruit.  Debbie wants to know what she can bring.  If you have any suggestions, fire away!!

did you ever share your ricotta recipe? I have a container of ricotta with nothing to do with it.

I did, but here ya go:

16 oz. part-skim ricotta
1 tsp. vanilla
2 eggs
1/2 cup Splenda

Make it all up, pour it into a greased (Pam) pie pan and bake at 325 degrees until the top is lightly browned.  I usually double the recipe, and just bake till it looks pretty!

Variation:

You can also try different extracts.  I've used orange - it's yummy, and I'm betting that almond would be equally so!

REALLY good with whippage and berries!!

Good idea!!!  Although I'm a planner by nature - I sure don't want to step on anyone's toes, either!!!

I'm bringing my beach friendly wheeled cooler, and I'm praying it'll be nice enough that we can just pack up an assortment of stuff and lunch on the beach!!!!

I am really game to just kind of play it by ear for the most part

we can go out for crabs/shrimp saturday night...  that works for me.


i'm thinking we can bring stuff down and i'm sure there is a grocery store nearby!

Oh yes, we have a really nice grocery store right up the road from me. There is also a clothing store right next to the grocery store called Treasure Island that has some really nice clothes. A little on the high side but has sale items too.

I would maybe like to eat breakfast out at least one morning. I am playing it by ear also. I want EVERYONE to do only what they want to do. If we go out for AYCE crabs I probably won't do that. If Lisa brings them then I am sure I will do that.

I would also like to go and see the sunset one night if anyone is interested.
