Nik's interpretation of peanut butter pie

for crust:

2 c. Fiber One twig cereal, crushed into crumbs
2 tbsp Blue Bonnet Light

for filling

2.5 c. fat free greek yogurt
1/2 c. fat free whipped cream
1/2 c. PB2
1 scoop chocolate whey protein
1/2 c. Splenda

Directions:

1.  Cut ICBINB into fiber one twigs until it is chunky.  Pour into pie plate and press over the surface of the pie plate.  Put that in the oven on 350 for 10 minutes

2.  In a mixing bowl combine all filling ingredients.  Use a hand mixer on low speed for 2 minutes, then switch to high speed for another 2-3 minutes ****il fluffy)

3.  Once pie crust is done let it cool a few minutes and then pour yogurt mixture into it and spread evenly.

4.  Refrigerate for a couple of hours

Here are the stats for 1 slice (I have a 10 slice pie slicer so that's how much it's gonna yield for me):

116 cals, 4g fat, 11g carbs, 4g sugar, 2g fiber, 12g protein

Verdict: well I only tasted the filling but NOM! NOM!  TRIPLE QUADRUPLETY NOM!

you can just skip the carbs and just eat the filling! sounds really good. i will try it.

Hey Nicole~

I thought I'd point out that saying "skip the carbs" is a bit misleading.  There is starch in this but it's from Fiber One.  But the bulk of the carbs (I broke down my recipe on my food journal) comes from the yogurt which you'd still get even if you were eating the filling. 

Just thought I'd point that out as I know we all try to be careful about our carbs and I strive in my recipes to include good carbs.  The crust makes up about 3g of carbs (and both grams of fiber so 1 net carb) in a slice of this pie while the yogurt makes up most of the rest (the PB2 has some carbs in it too).

oh really? well the carbs in yogurt is fine. i am more concerned bout carbs from processed starches so cool! looking forward to meeting up soon so we can come up w/ some cool recipes. if you like indian, i have a really good recipe, in my opinion, for a spicy indian dish!
