X-post...low carb pancakes...
There is this stuff you can order from the internet called Carbquik (low carb "Bisquik"). It is very versatile and works just like white flour, except with 80% less carbs! Anyways, this morning I wanted pancakes so this is what I whipped up:
I'm still raising my eyebrows on the stats of this one.

Cinnamon Carbquik Pancakes
1/3 c. Carbquik (Google it)
1 egg
1/2 NSA applesauce cup
1/4 c. skim milk
1/4 c. Splenda
a few generous shakes of cinnamon
Directions:
Put everything in a bowl and mix well (I used a hand mixer on low)
Spray a pan with nonstick spray and put it on high heat for a few seconds then drop down to medium heat.
Add a good sized dollop of the pancake mixture and let it coo****il the first few bubbles form then flip it and cook another minute on the other side. (CQ cooks faster than regular mixes I find, so don't wait until it is really holey to flip it).
According to Livestrong here are the stats on two (I got 6 total out of this batch):
43 cals, 2g fat, 6g carbs, 4g fiber (so 2 net carbs), 3g protein
Verdict: I ate two "regular people" sized pancakes and they were very moist and flavorful. No bitter aftertaste like I got with my CQ soft pretzels. I put a smidgen of Blue Bonnet Light and some Sugar free breakfast syrup on there. Served with a side of turkey bacon (one slice) and I'm good to go!
If you're in the mood for a "regular pancake" (meaning one without the ricotta) My breakfast this am clocked in at around 100 cals, which is not so great (too low). Luckily that means I'll get hungry again in an hour and a half and then I'll make myself a Click Frappucino!

If you have a Shoppers near you, look for Maple Grove Farms sugar free pancake mix. They also are easier to make and pretty high in protein.
The last few batches of cottage cheese pancakes I've made weren't as tasty as I remember, so I switched to the low carb ones, and have found that both Big Train and Maple Grove Farms are great.

Protein pancakes are always going to be a bit firmer than a regular pancake. So if you are in the mood for fluff-stuff...I'd stick with a lower protein pancake and make up the grams somewhere else in your day. I'm one of those that doesn't like the cottage cheese/protein pancake because of the texture. Since this is about the third time post-op (15 mos. post-op) I have eaten pancakes I figure I can splurge!
Thank you for those product recommendations though. I am thinking of making some protein crepes (filled with protein pudding or a protein ricotta filling) and those will come in handy! With crepes...since I am a klutz it's better for them to be sturdier.
