Fat free ricotta sweetened with Splenda and orange extract - cannoli filling

Whole wheat pitas, sprayed with butter flavored cooking spray, and sprinkled with cinnamon and Splenda, cut into wedges and baked until crispy - pseudo-cannoli shells
