i had crazy good food tonight!

I've been getting cravings for the foods that got me into trouble (and weighing 306 lbs) in the past.  I'm using that energy to invent new meals/snacks that are WLS friendly and tonight I kicked butt!

Tonight's dinner..........(i didn't measure anything as i was cooking....so these are estimates) I cook for me and Jay and try to have some leftovers for him for lunch

Boneless chicken breasts, diced (i used 2)
Fresh broccoli, steamed but still firm (about 4-5 handfulls)
1 jar classico alfredo sauce (surprisingly NOT horrible for you!)
4 strips of oscar mayer center cut bacon, cooked 'till crispy (again, NOT horrible for you!)
shredded italian cheese blend (maybe 1/2 - 3/4 cup)
5 garlic cloves, diced

Preheat the oven to 400 degrees.  Sautee your diced chicken in 1 tsp olive oil until golden on the outside (not cooked through though) and then add garlic to chicken until garlic is just softened.  Combine chicken, garlic, broccoli, bacon, 3/4 alfredo and cheese in a casserole dish.  Pour remaining sauce on top of casserole.  Cook 30 minutes.....top with additional cheese and pop back into the oven to melt. 

I wanted to LICK my plate.

I made pasta for Jay and served his casserole over pasta.......so you could do that for the non WLS people in your life.  He loved it......there were NO leftovers.


Dessert........its my version of a recipe on the back of a rice cake package.

1 caramel corn rice cake
1/3 cup breyers NSA vanilla ice cream
a few slices banana
SF Smucker's caramel topping (in the squeeze bottle)

Spread ice cream on rice cake.......top with bananas and caramel.  I can't stop thinking about it....it was heavenly.

The recipe on the back of the package has you use cool whip instead of ice cream and then top with peanuts.  Sounds almost as good =)

What are the numbers on all this??  Its the carbs that scare me.  I need 1150 cals and 90 proteins mg per day without going to the gym.  I'am pretty limited

Your dietary needs sound very typical of a post-op.  I average 900-1100 calories per day....I watch carbs but don't stress since I do go to they gym and need SOME carbs for energy!  I track all of my food on The Daily Plate........so these are the figures for the portions that I ate

For the casserole........(to me, the garlic isn't worth tracking)

(food/serv.size/calories/fat/cholesterol/sodium/carbs/sugar/fiber/protein)

Chicken Breast 2 oz. 65 1g 34mg 39mg 0g 0g 0g 14g
Wegmans Italian Blend Shredded Cheese 1/4 cup 80 6g 20mg 340mg 0g 0g 0g 4g

so as you can see, the total calories for dinner is 291, protein: 25g, carbs: 6g

For the dessert........

total calories: 178, protein: 3g, carbs: 37g (its a bit carby......carbs in moderation aren't the devil!)

Generally speaking, a diet is considered low-moderate in carbs when the total carbs = < 45% of the total calories for the day.  Today was a high carb day for me......my carbs were 42% of my calories.  The Daily Plate is a great tool for tracking your nutritional stats if you're interested in that kind of thing.

Both of these "recipes" can be easily worked into the meal plan of a post-op (in my humble opinion).  At the end of the day you have to live with your food choices.......its the end of my day and I'm thrilled with the healthy AND delicious choices I made today!

Oh, YUM, Lauren!!!  Some of the best things I've made have been the result of me just throwing things together!!!!

This sounds really good.  I haven't tried rice cakes post-op...I'll have to soon.

I've made chicken alfredo a couple of times but haven't done it as a casserole.  My hubby doesn't like broccoli so I'd probably omit that and perhaps add spaghetti squash instead.
