no longer morbidly obese plus 1 good recipe

cool thing #1: I'm no longer morbidly obese.....I'm just obese...which is pretty cool to me.

I had a great dinner tonight.....high in protein and it was delicious!  Everyone in the family can enjoy it....If I had a family to feed I'd serve it over rice.  I ate mine with a side of green peas. 


 Gastric Bypass-friendly Chicken Cordon Bleu

1  raw chicken tender (2 oz.) pounded out until its pretty flat
1 slice deli ham (1 oz.)
1 slice swiss cheese
2 tbsp bread crumbs seasoned to taste (I used seasoned salt, thyme, garlic powder and pepper)
margarine
3 toothpicks
98% FF cream of mushroom soup
skim milk

Preheat oven to 400 degrees.  Place ham and cheese on chicken tender and roll up, secure with toothpicks.  Sprinkle chicken roll with bread crumbs, place on cookie sheet and top with 1 tsp margarine.  Bake for 20 ish minutes or until chicken is cooked through.  While chicken is cooking thin the soup with skim milk and season to taste.  Spoon sauce over chicken and enjoy!
