Cottage Cheese Pancakes

I discovered and first posted this recipe back in July 2006 - jeez, I've been around a while!!  LOL!!!

Anyway, I'd been wanting to try it again, so I did some searching and here it is!  Hope you enjoy!

1 egg
1/2 cup 1 percent fat cottage cheese
1 small onion, diced
salt & pepper to taste
2 tablespoons of flour
1 teaspoon butter

Saute onion in butter, set aside to cool. Beat egg, add salt & pepper, cottage cheese and flour, and onion. Drop by spoonfuls in skillet sprayed with non-stick spray, and cook like pancakes - when they bubble, turn them over. Yummy, savory. I've also gotten creative and omitted the onion, salt and pepper and added Splenda and cinnamon - very French-toast like with s/f syrup.

Other versions that I thought might be interesting:

Add chives, top w/sour cream.
Add taco seasoning & cheddar cheese, top w/salsa (my personal fave lube)
Add Old Bay and shrimp - hmmm, gotta think about that one.
Add feta and chopped tomatoes.

Thanks Tia...I'd seen the recipe before but had never seen a review as to taste or consistency.  I've been craving french toast ever since seeing the stuffed french toast on the Mimi's menu.  I'll have to buckle down and try it out since I have all the ingredients!

Guess what I'm having for dinner tonight?  I remember really liking them and they're full of protein - so what's not to love!!!

Hmmmmm maybe I will give it a try but geesh does it have to be cottage cheese?  lol  Sorry I am just not a big fan of cottage cheese.

Well, if it wasn't, then I guess they wouldn't be called "Cottage Cheese Pancakes," now, would they???  LOL!!!

Actually, the one tastes so much like French toast you'd never know it wasn't!!!

Hello sweetness!!!!

Are we on for our hot date tomorrow night?  LOL!!!  I'll be in the office around 9 as I have a dental appt. at 8, so working until 5:30 or so fits right in.

Tia,

This receipe sounds so good, as soon as I am able to I am going to try it I think I will do the splenda cinamon verison as I have been craving pancakes.
