a letter to the Food netwrok
ok.....I've been walking around with a chip on my shoulder all week LOL so i took it out on the food network! LOL
here's my letter I wrote to them:
Hi there!
For many years, I have only watched the Food Network. I watch it right before bed and I watch it during my workouts in the gym. I am noticing an increase in the number of bariatric (gastric bypass, lap band, etc) patients in the US as the standards for getting the surgery are getting easier. I am one who was lucky enough to receive the gastric bypass in may of 2008 and have lost over 200 pounds.
I guess what I'm driving at is that there is a whole market of people like me who could benefit from a show that is geared towards bariatric patients in what we can and should eat. As with any surgery, every doctor's requirement are a bit different from one doctor to another but the basic principles are still there--high protein, low fat, low carb meals for people who have to learn how to eat all over again. I can give you a recipe that I know I do well with and it's recipes like the one I'll give you that many people may not even know about.
People like myself took a long hard look and made the toughest decision of our lives to have surgery to help us with our weightloss. Many of us are on the ball with our rules for after the surgery however there's many many more that are floundering with no real direction given to them as to what they should be eating because of varying cir****tances. this could be your chance to be a beacon of light to these people who have lost their way on the path to their weightloss.
Anyway, I've rambled on enough. Here's the recipe I have fairly often:
remember this recipe if bariatric sized so it's real small portions
Chicken Parmesan Cheesy Pizza Bake
1/4 Fat Free Ricotta cheese
2 boneless, skinless chicken tenderloins thawed
1/4 cup low carb pizza sauce
2 tablespoons of low fat Parmesan cheese
1/4 cup of part skim mozzarella cheese
garlic salt or Italian seasonings
preheat oven to 350 degrees
in a baking dish, spray liberally with non-stick cooking spray
spoon out the ricotta cheese on the bottom of the baking dish into a thin layer (large enough to fit the chicken on top).
sprinkle garlic salt or Italian seasonings on top of the ricotta cheese.
Lay the chicken tenderloins on top of the ricotta cheese
spoon the pizza sauce on top of the chicken and ricotta.
sprinkle the Parmesan cheese on top of the pizza sauce
sprinkle the top with the mozzarella cheese and you can either put more garlic salt or italian seasonings on top of the mozzarella cheese.
Bake at 350 for 30 minutes. If you are hurried, you can put frozen chicken tenderloins in then bake for 45 minutes instead. the cheese on top will be a nice golden brown.
this recipe will feed 1 person with no left-overs. I have also made this for dinner parties in which I fill a whole casserole dish and is a great hit even with people who have not had weightloss surgery.
