Oven Fried Chicken

Oven Fried Chicken

1 3 1/2 pound chicken, cut into 7 pieces and skinned
1 cup low fat 1% buttermilk
2 tablespoons canola oil
3/4 cup corn flake crumbs
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon ground black pepper

In a gallon size zippered plastic bag, combine the chicken and buttermilk. Seal the bag, squeezing out air; turn to coat the chicken. Refrigerate at least 2 hours and up to 8 hours, turn in the bag occasionally. Drain the chicken and discard the buttermilk. Preheat the oven to 400F. Line a baking sheet with foil and coat with 1 tablespoon of the oil. In a gallon size zippered plastic bag, combine the corn flake crumbs, thyme oregano and pepper; shake well. Add the chicken, one piece at a time and shake the bag to coat the chicken well. Place on the prepared baking sheet and drizzle evenly with the remaining oil. Bake until cooked through and the juices run clear when the chicken is pierced in the thickest part with a fork, 35 to 40 minutes. 7 servings.

Jilly!!!  You evil little thing!!!!  LOL!!!  Chicken is not always my friend, but HOW did you know I've been craving fried chicken??????

E.S.P!! hehehe Nah I have been too. I found it on a few different post WLS recipe sites so I will have to get Mike to make it this week! LOL YUUUUUUUUUUUUMMM! I have to watch myself though because my pouch tolerates a lot. I have had a lot of salad the last few days and red meat which a lot of people cant tolerate until 6 mos out. I had tacos and half a hamburger, granted the meat was super lean. ;o)

3 years post-op and my fave saying is, "Beef, chicken and pork are NOT my friends!"

However, that varies greatly - I can eat ground beef, but have a hard time with compacted meat as in hamburgers and meat loaf, and I can't eat a plain grilled chicken breast, even with gravy, but I can eat grilled chicken cut up in a salad (must be the dressing/lube).  Pork doesn't seem to like me, so I don't usually bother - yes, even cooked in a crockpot, but I can eat Italian sausages cooked in a crockpot (casing removed).

Yes, I'm quite the wls conundrum!!!!!  LOL!!!!

But thanks for all the recipes.  I enjoy reading them!!  I collect cookbooks and read them like novels!!!  LMAO!!!

LOL I collect cookbooks now too and MY ASS DONT EVEN COOK! LOL But I collect them and then tell Mike what to cook .hehehehehe He LOVES to cook!!!! I have not thrown up any since surgery and I am 8 weeks out this Thursday. KNOCK ON WOOD! I tolerate a lot in MODERATION!!! I love reading these recipes myself and you know I share ;o) LOL

My lot in life ... if it Moo'd, Oinked, or Clucked in a former life . chances are it's not gonna like me!!!!   I am so there with you on what my pouch will tolerate and that is at almost 5 years out.   I still try everything and sometimes it actually stays put!

If we spend our time comparing our life/weight loss/body to others, we totally miss what WE have accomplished.   Keep in mind how far you have come and what you can do now that you couldn't do weeks/months/years ago.   I hate the expression " It's all good", but in this case it fits!   Wherever you are in your journey  ... It's ALL good!!!

hahaha Mike was talking about that a month ago saying how you NEVER see a resteraunt with a special place on their menu for WLS patients. They SHOULD have that. I mean HELLO we cant eat a whole meal. But if they do that they feel they lose money. I went out to eat at Cheeseburger in Paradise and I was telling the cook there that. They made me a yummy grilled chicken breast with brown rice and steamed veggies. Yum! I ended up taking most home and ate it over 3 days. LOL

Jilly, have you eaten at Olive & Sesame yet?  They have a page for diets....they even have one thing called a protein something or other...their food is awesome!  Ron and I went there on Friday night for the first time...it was excellent!!

Sheesh - just have a buffet style restaurant.  Only  the plates will be tea cup saucer size.
