Catfish...I may have this tonight.

Seasoned Pan Fried Catfish

1/2 cup potato flakes, instant
1/2 teaspoon seasoned salt
1/8 teaspoon ground black pepper
1 pound catfish fillets
1 egg, beaten
butter flavored cooking spray

In a shallow dish, combine potato flakes, seasoned salt and pepper.

Dip catfish fillets in beaten egg, then coat well with seasoned potato mixture.

Place in a large nonstick skillet coated generously with cooking spray and cook over medium heat until fillets are golden, about 10 minutes.

Spray remaining uncooked side of fillets with cooking spray, turn over and continue cooking until golden and fish flakes easily with a fork about 10 more minutes. Turn only once during cooking.

4 servings.

Thanks for posting this one.   I LOVE catfish and am challenged when it comes to fixing it myself.   I am definitely going to save this one.

If we spend our time comparing our life/weight loss/body to others, we totally miss what WE have accomplished.   Keep in mind how far you have come and what you can do now that you couldn't do weeks/months/years ago.   I hate the expression " It's all good", but in this case it fits!   Wherever you are in your journey  ... It's ALL good!!!

Your welcome honey. I like it too but the only place I have ever ate it is at Texas Roadhouse. LOL Now I will have to eat it in a healthier fashion. LOL So I am getting Mike to try and cook it this week. We just got a huge bag of catfish the other night. :o)

I usually try to get it blackened when I can rather than breaded and fried.   I've found a few places where it is only lightly breaded and not so heavy.
