What's your Favorite After WLS Recipe? (Non-protein shake please)
Hi everyone! I thought I'd like to see recipes being shared on here to help give us ideas. I feel like at times I run into a funk and have no idea what to fix without boring those on the homefront with the same menu weekly.
One of my favorite dishes to make is:
White Chicken Chili
5 cans of White Kidney Beans (Canelli Beans *sp*)
1 can of spicy stewed tomatoes
1 can of diced green chilies
1 pkg of McCormick White Chili seasoning
1 pkg of Perdue Already Cooked Chicken Strips
Simmer everything together for 20-30 minutes until it's hot & bubbly.
I top mine with raw onions, Lowfat Sour Cream, jalapenos and shredded cheddar cheese.
This makes 5 big bowls of chili... so in my estimate... it serves 5 - 10 people! Hahaha
I look forward to seeing more recipes!
Thanks bunches,
Ren

Hi Ren,
I tried the McCormick's White Chicken Chili this week but substituted ground turkey. My husband loved it but I wasn't such a big fan. Next time I'll use your recipe because it's much heartier than what I did...that's what I like!
My favorite go to meal post WLS has been regular chili:
1 lb ground turkey
2 15 oz. cans tomatoe sauce
1 can diced tomatoes
1 can pinto beans (or kidney)
1 package McCormick 30% less salt chili seasoning
I let mine simmer for a few hours and YUMMO!
I've also been using my crockpot alot recently so that the meat is as moist as possible. I've made pork roast w/baby carrots which came out kind of bland, needed more spices. I made pot roast the other day and it turned out FABULOUS!!
2-3 lb beef chuck roast
1-2 cut up potatoes
1/2 bag baby carrots
1 onion cut into chunks
1 package McCormicks (I think) Slow Simmer pot roast flavoring
About once a week or every other week I'll buy a rotisserie chicken because even the breast meat is moist. We'll have chicken w/gravy, some kind of veggie, and mashed potatoes. I've made chicken salad with the leftovers and it's wonderful. I've also cut up the leftover meat and simmered it in Alredo Sauce. With that I had spaghetti squash in the place of pasta and even my husband liked it.
Just a few ideas...

Oooh! I always forget about the crockpot roast beef! That is always so good.
I also haven't tried the spaghetti squash, I've been a bit gun shy. Maybe I'll become brave and look for it in the store. I'm sure I can find a recipe online on how long to cook it.
Rotisserie chicken rocks! I like getting mine from Costco. It's much larger then the grocery store ones. Over the Christmas holidays, I made a chicken salad with rotesserie chicken, halved some seedless red grapes and added some chopped pecans.
Editted to add: and some finely chopped celery
A bit of lite mayonnaise and some Lite Ranch, a few twists of pepper and it was really yummy! Especially the next day.
