Give 'em a try....I had them last night and was in HEAVEN.

WLS-Friendly Mozarella Sticks

You'll Need:
2 sticks of string cheese ( I use Polly-O 2%)
1 egg, beaten
1/2 cup Fiber One Cereal
1/4 cup Marinara Sauce (I use Bertolli's Marinara)
Pam cooking spray
Cookie Sheet

Pulse your Fiber One in a food processor until it is very fine.  Spread crumbs out on a plate.  Cut your string cheese in half to make four pieces of cheese.  Pour about 1/4 cup of egg beaters into a bowl.  Dip the cheese sticks into the egg beaters and then roll in Fiber One crumbs.  Do this process twice on each stick to get a good coating.  Spray the cookie sheet with cooking spray, place coated cheese sticks on cookie sheet and spray the tops of the cheese sticks with more cooking spray.  Bake at 375 until cheese sticks begin to ooze (10ish minutes depending on your oven...just keep a good eye on them).  Heat your marinara while your cheese is getting gooey.  When done in the oven, dip your cheese sticks in marinara and enjoy!

Nutrition Info (using my ingredients and assuming that you use the whole egg, all of the marinara sauce, and all of the Fiber One crumbs):

Thanks for the recipe.  I saw a similar one on another board and someone recommended freezing the string cheese after cutting it in half.  Can't wait to try this!
