Pizza Meatloaf recipe...

Some of you have asked for this recipe and I've just now gotten around to posting it!  Sorry for the delay!  I have an issue with compacted meat (handmade burgers, meatloaf, etc) but THIS recipe I have never gotten sick off of!

This is the whole recipe.  It makes a very large meatloaf.  I usually mix the meatloaf and split the raw mixture in half then freeze half for the following week (it freezes well!).  Half the recipe is enough for two bandster adults and a 4 year old for TWO meals plus 1-2 pieces leftover for the dog!  
 
Pizza Meatloaf
 
2 Eggs
14 oz. Don Pepino PIZZA sauce
1 C Mozzarella cheese (low fat)
1 C Italian bread crumbs OR oatmeal
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
2 lbs. Meatloaf mix (beef/pork/veal)
 
Combine meat, 3/4 C sauce, eggs, crumbs or oatmeal, cheese, garlic and pepper.  Shape into a loaf and bake at 350 degrees for 75 minutes, cover with remaining sauce and bake 15 more minutes.  If you like extra sauce just pour it around the meatloaf to warm while cooking the last 15 minutes.

  Next time you make it, wouldja save me a piece?  I'm right there with ya - compacted meat =  for me!!  But you keep talking about this one, so maybe it'll work.
