Hi Tia, The mashed cauliflower sounds good, Can you give me the recipe? I'm still having a hard time with veggies. I'm filled with gladness! 1. I glad that is is a beautiful day and we are going for a hike!! 2. That my daughter has no school today. 3. That my husband is taking 1/2 day and will be home soon! Mary
Hi Mary! Actually, the first time I had mashed cauliflower was at Ruby Tuesday's, don't know if they still serve it or not. All I did was overcook a bag of frozen cauliflower, drain it well, ma**** up with a fork (I left mine just a little chunky), added some margarine, about a teaspoon of cream cheese (I didn't have fat free but I'm sure it would work just as well), and garlic salt and pepper to taste.
