Good source of protein

I have always been a great cook but since RNY I have been a little lost on fixing things for myself that are more "gourmet" if you will.  I missed my calling to be a chef when I went into the medical field 17 years ago.  Who knows maybe when I grow up I will be a chef.  ANYWAY! This is a must try, stuffed meat loaf. 

 

You will need:

ground turkey

onion

1 packet of McCormick meatloaf spices

yellow american cheese

fresh asparagus

 

I took the turkey, onion and meatloaf spices and mixed it all together.  I then made a large indent for one slice of cheese cut in half to cover the bottom.  Then took the fresh asparagus and folded the turkey around it.  I tuned it right side up so you did not see the fold.  (you know I did take a pic of this)  I cooked it for 35 mins. on 350 and then the last 10 min put two slices of cheese on the top (no I did not use fat free cheese).  It is sooooooo good.  If it is not moist enough, you can use fat free turkey gravy on the top as well.

That sounds great! I'll have to try it when I get to the real food phase. When I was on Atkins, a friend of mine shared a great meatloaf recipe with me. It's a little denser than traditional meatloaf, when it doesn't have bread crumbs in it.  I've since tried with the the 4C reduced carb bread crumbs, and it's very good. It's up to the individual cook to decide how many carbs they want to have. Mix a pound of ground beef or turkey (I used turkey myself) with the usual meatloaf mix-ins, which in my case are eggs, parm cheese, low-carb bread crumbs, chopped onions, parsley and one-carb ketchup. Put 1/2 of the meat mixture in a loaf pan. Layer low-fat cheddar cheese, chopped onions, and chopped pickles (I use dill relish). Put the remaining 1/2 of the meat mixture on top, and bake at 400 for about 45-60 min. Top with burger condiments like low carb ketchup and any mustard to keep it moist. There you go for cheeseburger meatloaf.

Sounds great, Kristen!!  Sadly, I can't eat any compacted meat (burgers, meatloaf, most meatballs).  Don't know why and I don't expect it'll change since I'm over 2 years post-op.   I love to cook, too, but oddly, didn't really mourn food after surgery.  In fact, I pretty much eat normally now.  If someone were to watch me eat, they'd probably wonder why I pick all of the protein out of something first, but other than that, life is good, food-wise! Tia

I bought ground turkey last night at Sam's.  I think I will try my usual recipe and see how that comes out using the turkey. Hugs, Mo

If we spend our time comparing our life/weight loss/body to others, we totally miss what WE have accomplished.   Keep in mind how far you have come and what you can do now that you couldn't do weeks/months/years ago.   I hate the expression " It's all good", but in this case it fits!   Wherever you are in your journey  ... It's ALL good!!!

Sounds great.  Over the last month, I've been buying and experimenting with ground chicken.  I LOVE it!!  My husband and I both prefer it over ground turkey now.
