So bored with food - PLEASE HELP!
Not sure what types of food you like, but one thing I like to do is get a small whole grain pita bread, put tomato paste on it, onions, mushrooms, and broccoli and what ever else, sometimes red pepper and then some garlic and put a little lowfat cheese grated on it and boil it in the oven until the cheese is melted. If you wanted you could put some chicken or something on it if you wanted to. It is so good

Well, I'm not sure what you like and what your pouch will tolerate, but I'll try to give you some ideas.
For me at almost 1 year, I still have a hard time tolerating beef, chicken and pork. No matter how it's cooked, it always just seems too dense. I don't do bread (lead-like), pasta, rice, etc., and TRY to stay away from sugars - note I said TRY!
At this point, I guess you're only limited by what you CAN eat, so I'll give you some good protein sources:
I eat LOTS of shrimp. I buy 5 pounds at a time, freeze about 12-18 in freezer bags, depending upon the size, and voila - a meal! I get the easy peel, sautee them in some olive oil and Old Bay, and you can virtually add them to anything. I don't think I ate raw veggies until I was 3 months out, but you might want to check with your doc/nut. Once you can eat salad, the shrimp go well in the salad. Also, you can eat them like shrimp ****tail dipped in ****tail sauce, or for something different, ranch dressing. I also like to combine them with feta cheese, green beans and diced tomatoes. You can put them in omelettes, but eggs usually bother me unless I pair them with salsa.
Shrimp salad - once you can eat raw veggies, on cuke slices.
Ground turkey, sauteed in a little olive oil with Montreal steak seasoning - brown, and add a can of black beans and a can of spiced, diced tomatoes. Top with shredded cheese and/or sour cream.
Omelette with ricotta filling, topped with spaghetti sauce and string cheese.
Turkey Italian sausage, casings removed, cooked in the crockpot with tomato sauce, peppers and onions.
Greek yogurt - tastes like sour cream if you leave it unsweetened. Add Splenda and berries, tastes like vanilla yogurt, but has more protein.
I use the EAS Advant Edge low carb pre-made shakes in French Vanilla as my daily coffee creamer.
My new love is cottage cheese pancakes:
1/2 cup 1% cottage cheese
2 tablespoons of flour
1 egg
1 small onion diced
salt & pepper
Sautee onion, set aside to cool. Beat egg, add remaining ingredients and onion and spoon into skilled sprayed WELL with non-stick spray. Cook just like pancakes, top w/sour cream and/or salsa.
I also made a sweet version - omit onions, salt & pepper, add cinnamon & Splenda to taste - topped with s/f syrup, tastes just like French toast.
I just find that I have to be really creative. As your pouch becomes accustomed to new foods, you'll be able to eat different things. Keep in mind that what you can eat today, you may not be able to tomorrow.
