Cottage Cheese Pancakes

Hey all - For those of you who didn't get Bariatric Eating's latest recipe for cottage cheese pancakes, I thought I'd share: 1 egg 1/2 cup 1 percent fat cottage cheese 1 small onion, diced salt & pepper to taste 2 tablespoons of flour 1 teaspoon butter Saute onion in butter, set aside to cool. Beat egg, add salt & pepper, cottage cheese and flour, and onion. Drop by spoonfuls in skillet sprayed with non-stick spray, and cook like pancakes - when they bubble, turn them over. Yummy, savory. Can't give you nutritional info, and I think Bariatric Eating said it makes 6, but they'd have to be pretty small, I made four. I got a little creative on Sunday and omitted the onion, salt and pepper and added Splenda and cinnamon - very French-toast like with s/f syrup. Other versions that I thought might be interesting: Add chives, top w/sour cream. Add taco seasoning & cheddar cheese, top w/salsa (my personal fave lube) Add Old Bay and shrimp - hmmm, gotta think about that one. Add feta and chopped tomatoes. Any suggestions? Thanks, Teresa
