Bran Muffin Recipe to keep you regular

for those of you that have issues with keping regular, I have this Bran Muffin recipe to share. I eat 1 bran muffin a day now and it seems to do the trick .



BRAN MUFFINS (Batter will stay ok for 4 weeks in the fridge)

You need to mix this batter up the day before as they sit in the fridge overnight before baking


INGREDIENTS
1 Cup boiled water
2 cups bran flakes
1 cup all bran (looks like worms)
2 eggs
1 cup sugar (I substitute 1 cup of sweetener)
¾ cup oil or substitute with 3/4 cup block style margarine, softened room temp.
2 ½ cups flour, use whole wheat if you need more fiber
4 teaspoons baking soda
1 teaspoon salt
½ of a block of date square cut up tiny
1/8 cup molasses
½ quart or 2 cups of buttermilk (can make it by adding 4 Tablespoons of lemon juice or vinegar to 2 cups of milk)

optional: raisins if your bran flakes don't have raisins in it already
1 scoop of unflavoured protein powder for more protein

1. boil 1 cup of water and pour it over the all bran (wormy cereal). Set aside to cool
2. in large bowl mix: 2 eggs, beat the eggs for 1 minute. Add 1 cup white sugar and beat for 1 minute. Add ¾ cup block margarine or oil ( I use margarine), beat. Add your 2 cups prepared buttermilk, and 1/8 cup molasses, beat a minute.
3. add all at one time, your 2 ½ cups of flour, 4 tsps baking soda, 1 tsp salt. Beat till mixed
4. add 2 cups bran flakes cereal, dates.
5. add your cooled all bran cereal from #1
6. add your optional raisins and protein powder if you want them
7. stir with spoon until well mixed
8. cover, and put in fridge overnight until next day before baking (all the cereal will soften)

Bake next day in medium size muffin tin . I bake mine at 325 for 23-25 minutes but my stove is hotter than others. Some bake at 350 for 20 to 25 minutes.

The batter will stay in the fridge for 4 weeks so you can make a few each day if you want or make a bunch and freeze them. I make about 24 medium size muffins with this recipe.
