Recipe - Nutty & Fruity Quinoa Salad w/Maple Vinaigrette
Salad
1c quinoa, rinsed
1/2c sliced almonds
1/2c coarsely chopped apple
1/2c coarsely chopped apricots
1/4c toasted unsalted sunflower seeds
1/4c dried cranberries
1/4c raisins
2 tbsp finely chopped fresh mint
1. In a medium sauce pan, combine quinoa and 2c water; bring to a boil over high heat. Reduce heat to low, cover and simmer for about 20 mins or until liquid is absorbed and quuinoa is tender. Let stand for 5 mins. Fluff with fork.
2. Transfer quinoa to a large bowl. Add almonds, apples, apricots, sunflower seeds, cranberries, raisin and mint; toss to combine. Pour in vinaigrette and toss gently to coat.
Maple Vinaigrette
1/3c pure maple syrup
1/3c cider vinegar
1/4c honey mustard
2 tbsp canola oil
1. In a jar, combine maple syrup, vinegar, mustard, oil and 2tbsp water. Seal and shake until well blended.
2. Store inthe refrigerator for up to 1 week, shaking well before use.
