Quinoa
Hey there!
OK I don't know if I'm the only one who hasn't tried this yet, but I made it last night and it was pretty good. I made it just like rice and then added roasted asparagus and some crumbled goat cheese. The first mouthful was like W-T-F but then I really enjoyed it and it never bothered by sleeve at, but then neither did the 2 caesars I had while we were barbecueing! LOL!
I find this post on the VSG forum and thought it might interest you too:

I LOVE this stuff. We've been using it for about 2 years now, since I saw Michael Smith use it on Chef at Home (he pronounces it Kwenoa - lol and I still do. I can't get into the other way! My son keeps correcting me!)
I love to use it as a stir fry. Kind of like rice-a-roni. Brown it in the skillet then add the veggies and broth and let it simmer. I've also used it in couscous recipes in place of the couscous. My hubby who hates couscous love this and both of my sons prefer this to rice.

Ok, I must be the only person who does not like Quinoa. My hubby bought some and tried cooking it like rice. 1 cup of Quinoa to 1.5 cups of water and I put spices in and it turned out like mush. Not tasting very good at all.
When you say rice do you mean that it is fluffy like rice, cause that I think I would like.
