As our post op community grows, I thought it would be cool to share some of the recipes that work. This one has been great for mushies phase and I will continue to use it as I go into full foods.

Cheesecake...MMMMM

CRUST:
8 Nilla wafers (or any low fat or sugar free wafers)
2 TBSP, Sugar Free Torani Syrup Vanilla Flavour
Crush wafers and mix with syrup to make crust.  Divide into 2 custard cups (about 1/4 cup size)

2 TBSP low fat or fat free cream cheese
2 TBSP Sugar free cheesecake jello pudding (get it in the states)
1/2 cup 0
1/2 cup 0% Greek Yogurt

Divide filing into 2 to cover crusts.  Cover and refrigerate.

When ready to eat, top with either canned sugar free cherry topping or fresh berries cooked in vanilla and brown sugar splenda..

I am post op week 5 and one of these takes me about 2 or 3 days to finish but it is a sweet way to get your protein!
