Definately yummy, soft and moist as well, so I recommend storing in the fridge once cooled. I made these last night and brought them to the Bridgewater support group. They got rave reviews and I was asked to post it... I just like sharing I guess LOL
Chunky Monkey Protein Cookies
1 package of sugar free Pillsbury Yellow Cake Mix
¼ cup of unsweetened applesauce
¼ cup of splenda
2 eggs
½ cup of banana baby food
½ cup of semi sweet chocolate chips
2/3 cup of chopped nuts (I used pecans, I don’t like walnuts)
2 scoops of vanilla protein powder
Preheat oven to 400o F, Spray 2 baking sheets with cooking spray, set aside. In a large bowl, combine cake mix, protein powder, applesauce, splenda, eggs and babyfood, stirring with a spoon until well mixed. Stir in chocolate chips and nuts. Drop heaping tablespoon of the dough on baking sheets, spacing 2in apart. Bake for 10-12 minutes or until light golden brown. Cool on wire rack.
Pumpkin Spice Protein Cookies
1¼ cup of sifted flour
¾ cup of protein powder
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp pumpkin pie spice
½ tsp salt
1 cup unsweetened applesauce
1 cup splenda
1 cup pumpkin
1 egg
1 tsp vanilla
½ cup of chopped nuts of your choice (I use pecans)
Sift dry ingredients. Cream applesauce and sugar. Add dry ingredients and pumpkin and egg. Add nuts and vanilla last. Drop by the teaspoon on greased cookie sheet. Bake 350 for 10-15 min.
Lean Dessert flavors are made by BSN, I buy them through GNC online though, as the stores dont normally have all the yummy flavors. But honestly, you could use whatever vanilla protein powder you want instead of the cinnamon roll, Im sure it would be just as yummy.
