Low Carb Cheesecake
19 ounces cream cheese
1 teaspoon vanilla extract
3 tablespoons protein powder -- sifted
1 1/2 cups artificial sweetener
1/2 teaspoon salt
6 eggs -- separated
2 cups sour cream
Beat egg whites till stiff - set aside. Beat egg yolks, add protein powder, splenda and salt and mix well. Add cream cheese and beat well. Add sour cream and vanilla. Beat well. Gently fold in egg whites. Pour into spring form pan.
Bake at 325 for 1 1/4 hours, turn off oven and leave in 10 more minutes.
NOTE:
If you want to swirl and make a marble cheesecake, mix unsweetened cocoa with splenda ****il it sweetens it to taste) and a pinch of water, pour on top and use butterknife to swirl into cheesecake.
This is an incredible cheesecake - very New York Style - well worth the effort!!!

Tonight I am making Applesauce Chicken in the crockpot from a recipe I found online!
4 frozen chix breasts
1 1/2 cups no sugar added applesauce
1 onion, finely chopped
1/2 tsp pepper
2 tsp garlic or 2 cloves, minced
1 tsp cinnamon
Put chix in crockpot and top w/ onions. Mix the other ingredients together and pour over chicken. 5-7 hours low or 3-4 high. Have not tried this yet, but should be done in a few minutes! Will come back to post how it was!
