Hello ladies !! (and the few brave men who may be lurking!)

I am in dire need of some new, good recipes! Don't get me wrong, I love my chili and chicken and turkey ... BUT I want some new and good food to check out !!

Send me your recipes!

I'll start by posting one of my favorites!

Sour Cream Chicken
4-6 skinless, boneless chicken breasts
1 carton fat free sour cream
1 can reduced fat/sodium cream of mushroom soup
1 packet onion soup mix

place chicken in crockpot and cover with sour cream, soup and onion mix.
simmer on low for 4-6 hours or on high for 2-3 hours.
yummy !
*I like to use less than 1 whole can of the mushroom soup; not a huuuuge fan of it

LOL!  Lisa and I are doing a walk for diabetes and we sold cupcakes to raise money!  Just the kind you buy in a box from Pillsbury and make ... BUT since we are raising $$ for diabetes we also made and sold sugar free cupakes :)  To make them more WLS friendly I used applesauce instead of oil.

I used to make these when I was doing the Atkins diet.  I won't be able to eat them right away but I will be making them in the future if allowed to have them.  I used to be able to find a blueberry flavored protein powder years ago, not sure if there is a blueberry flavored one anywhere.

Flax Seed Muffins:

1/4 cup flax seed -- grind - should make 1/2 cup ground

1/4 cup protein powder

2 tablespoons oil

1/4 cup artificial sweetener -- splenda is best

1 egg -- beaten

1 teaspoon baking powder

1 1/2 teaspoons banana extract -- or flavor of choice

1/4 teaspoon salt substitute -- gives potassium

1 ounce chopped nuts -- optional

1/2 cup water

Mix the above, let sit for a few minutes to thicken if necessary. Spoon into 6 non-stick (I spray with pam) muffin tins.

Bake 25-30 minutes at 350 degrees.
 

Total for Batch (Divide by number of muffins you make)

1094 Calories (kcal); 90g Total Fat; (78% calories from fat); 34g Protein;

20g Carbohydrate; 187mg Cholesterol; 592mg Sodium

Mock Diet Cream Cheese Brownie

1 Egg (Whole)

2 Splenda

2 Teaspoons Unsweetened Cocoa Powder

2 oz Cream Cheese

Microwave cream cheese in a microwave-safe bowl for 15 seconds to soften. Stir well to take out any air pockets and reduce clumps. Add the other ingredients and mix well. It is ok if you see small dots of cream cheese scattered throughout.

Microwave for 45-55 seconds depending on bowl used and power of microwave. If this does not result in a consistency you like, increase or decrese cooking time next time by 10 seconds each until desired consistency is achieved and note it for next time it is made.

NOTES:

Longer time will result in a dryer / fluffy consistency and shorter times will result in a moister / gooey "thick pudding like" consistency. Consistency will also vary depending on the bowl you use. Experiment with different bowls and times until you find what suits you.

This can also be made with cinnamon instead of cocoa powder for a cinnamon bun flavor.

Approx carbs = 4
Approx protein = 10-12 g depending on cocoa powder and cream cheese used.

Breakfast 'Cupcakes

1 pound sausage

2 whole eggs

2 egg whites

2 cups half and half

1/4 cup cheddar cheese

Preheat oven to 425. Place large cupcake liners into a jumbo size muffin tin (one that holds 6 jumbo muffins).

Fry sausage in a skillet and then rinse under ho****er to remove excess grease and set aside. Beat together eggs and half and half. Divide sausage between 6 cupcake liners. Top each with a little cheese then pour egg mixture on top until cups are about 3/4 full. Dont go much over that or the 'cupcakes' will spill over. Bake for 30 minutes or until well browned on the top.

Note: First, this is good for people who are less than thrilled with eggs. This is a modified quiche recipe that is much more custardy than eggy. They keep perfectly stacked in a tupperware container and are good zapped at full power for 1 minute in the microwave (remove the cupcake liner first).
