What are you eating today (Monday) or yesterday?
Will winter ever end? I know it will, but it seems endless to me now. But, I have to say that every winter I'm thankful that I no longer have to struggle getting in and out of the car wearing bulky winter outerwear over my bulky body.
Today's food plan:
B: protein latte
S: hot quinoa w/ PB2, banana & peanuts
S: red grapefruit
L: leftover beans, veggies & sausage
S: raw fennel
S: pear & Havarti cheese
D: herb-marinated shrimp, green beans, maybe some cornbread
S: Fiber One brownie
My husband likes cornbread, and southerners love it, but it's iffy for me. I have never cared for dry cornbread (it feels like eating kitty litter). I have a recipe for cornbread that uses creamed corn. It's very moist and delicious, but in my band days the sticky texture tended to clog up my stoma, and even now it can be a challenge to get through my sleeve. So I'll probably just eat 1-2 bites tonight while my husband plows through the rest of the batch.
This morning's workout will be a high intensity interval training class. I don't enjoy that class because my old hips just cannot take all the jumping and the instructor can't or won't show me modifications or substitutes for the (many) moves I can't do, but I figure some movement is better than none.

I made a new recipe over the weekend, Indian-Spiced Chicken w/ Chickpeas and Spinach, and talk about YUM!!!!
B-Yogurt w/ cashews
S-Cashews
L-Indian dish above
S-Sunflower seeds
D-Baked chicken thigh; chickpeas, green beans, snap peas, baby corn sauteed in herb olive oil
S-Greek yogurt w/ fresh strawberries
The Indian chicken w/ chickpeas & spinach sounds like something my husband would like (and me too, if it's not too spicy). Care to share the recipe?
