The crock-pot changed my life!

I have a ton of recipes, which I will share when I get home, but meanwhile, to get you started-- dump a jar of green salsa in with a few chicken breasts. That's it! Super moist and yummy chicken that shreds with a fork and is great alone or in Mexican style foods.

Also, sometimes, I just throw the chicken in with broth, nothing else, just to tenderize it, then use the chicken in a non-crocked recipe.

I am pretty sure that without it, I would either be choking daily or be a vegetarian, by now

I started using my crock pot after WLS, too. I will do chicken by itself and shred it for salads, tacos, whatever. So tender. I do have a low carb, crock pot, cook book. Love it. Will look for any steak recipes, later. Glad it's working for you all, too!!!

I think I am goin to attempt to conjur up a thai coconut curry chicken sort of thing in my crockpot.  I have some chicken in the freezer for AGES and every time I think about cooking it traditionally in some way, I just don't even bother taking it out of the freezer.  We'll see how that goes and if well I will post! 

Maybe Sunday if I am feeling ambitious - just had a fill so liquids and mushies right now but i'll be ready for some real food soon!

 this is a recipe I haven't made in a while, but very good.  

Swiss Steak Supper

1 1/2 lb boneless beef round steak, trimmed of fat, cut into  6 pieces
1/2 teaspoon peppered seasoned salt
6 to 8 small red potatoes, quartered 
1 1/2 cups fresh baby carrots
1 medium onion, sliced
1   14.5 oz can dice tomatoes with basil,garlic, and oregano, (I use petite diced tomatos and add the spices to taste)
1 jar beef gravy (I have used packaged brown gravy mix with 1 cup water)
 
Spray a skillet with cooking spray, heat over medium heat till hot, sprinkle the beef with the season salt cook for until browned turning once.  

Layer potatoes, carrots, beef, and onion in a  3 1/2 - 6 quart crockpot. In small bowl combine tomatoes and gravy mix well, spoon over beef and vegetables.

I am a huge fan of crock pots. Love the convenience factor. Plus meat is always tender when cooked in it. Will be trying the Greek chicken recipe!

I just had a really good roast. Super easy. Put roast, chicken breast or pork chops in crock pot, add one jar of gardennere(sp?)It is the pickled cauliflower,carrots. You can use regular or hot if you like spicy. The vinegar makes the meat soo tender. Great flavor.
