The crock-pot changed my life!
Just put together another crock-pot creation, and thought I would share how amazing that has been for me with the band.
I was having the absolute worst time getting down meat of any kind, which was forcing me towards carbs and easier (bad for you) food to swallow, when I was at a friends home who served a crock-pot meal that was so moist and amazing. That night I brought mine down from the cabinet, dusted it off, and have tried bazillions of great recipes that always make the meat tender enough to go down. It's easy to make really low-carb, delish meals and it's so mice to have dinner hot and waiting when I get home. I can't always swallow the leftovers, but for at least one night, it's easy, healthy eating!
I swear, I am not a spokesperson for crockpots! ...just hoping to give some helpful advice to anyone else who is having a hard time swallowing lean meats because of the dryness factor :)

I usually make a roast or chicken in mine.
There is an easy recipe that you can do with chicken, or pork, etc... Throw in the chicken, add a pkg. of Italian seasoning (dry salad dressing mix) and then about a 1/2 hour before you are ready to eat throw in a cream cheese packet to melt. It is yummy..can serve over noodles, have in quesidillas, tacos, etc..or by itself!!
I also like to use Salsa instead of the dressing mix...can use the leftovers in many different ways...

I just tried one using a can of cream chicken soup, a packet of ranch seasoning, and chicken breasts. I the crock pot for 7 hours on high. The chicken was very tender. I tried the same recipe with pork chops and it was tasty and tender. I serve it on mashed potatoes. It literally takes me 2 minutes prep. Does anyone have a tasty steak crockpot recipe?
I would think a roast would slow cook better than a steak but maybe sirloin steak or cube steak would work. Some steaks seem like they are just for the grill only like NY strip or filet. I miss grilled steak so much!
Reading some of the recipes above, I bet most any beef would be good with an onion soup mix packet and then throw in the block of cream cheese that was - or mixing the dry onion soup with cream of mushroom or cream of celery or something.
I would need to find some veggies that work better than potatoes. I like potatoes but they will send me into carb overload.
The greek one sounds yummy too. I'm going to see if I can't come up with something creative! If so, I will post!
