Turkey Roll-Ups - My Latest Food Obsession!!!

I just wanted to share this with you....

We're always sharing ideas and looking for new, interesting ways to get our protein in. Well, I did a lot of these turkey roll-ups when I first started. Then I guess I got bored for a little while. I rediscovered them over the weekend and I'm obsessed. Basically it is just sliced turkey breast wrapped with some variety of low fat cheese and whatever else you want to throw in there. I get the store baked turkey breast, so it is very low in sodium and no preservatives (it's actually REAL turkey).

It is a quick, easy meal (or even a snack, when I'm trying to stay away from cookies or chocolate) that is packed with protein. There are a million different combos so it takes a LONG time to get sick of them!  Here are my latest favorites:

Turkey +

* Low fat mozzarella cheese, fresh basil leaves, diced sundried tomato (not oil packed), dipped in balsamic vinegar

* Low fat pepper jack, avocado slices, dipped in salsa

* Low fat feta cheese, fresh spinach leaves, a diced cucumber, dipped in fat free Greek yogurt (or I make my own Greek tzatziki sauce with the yogurt - yum!)

* Low fat sharp cheddar, 1 slice crumbled bacon or bacon bits, diced tomato, dipped in BBQ sauce

* Low fat swiss, crumbled bacon, diced tomato, dipped in honey mustard

You can't go back and make a brand new start, but you can start from now and make a brand new end.

Also wanted to add....

I love to pop them in the microwave for about 30 seconds to warm it up and let the cheese melt just a little. You can also put them in a nonstick frying pan for a minute or so on each side. DELICIOUS!

I just love it when we share quick and easy food ideas and recipes! My last shared quick protein idea was 17 turkey pepperonis on a salad plate with 1/4 cup melted cheese.  Low fat, low calories, high protein.  Win, win!

YUMMY!  I totes forgot about those...used to eat them all the time too.  I go on kicks of certain foods and eat the same thing over and over, then stop, then start, etc.  LOL. 

I love to crisp up turkey pepperoni slices in the microwave and put them in a turkey slice with cheddar cheese, dijon mustard and OH YES - a pickle spear (I have to cut off the skins though).  The crispy pepperoni makes it feel like a really "snacky" snack. :)

Thanks!!! This is a really good idea for the family too. Im used these ideas this summer, with my 2 growing girls. I know the hubby will love them. I can't wait until I eat real food, just started mushy. But thanks, here we come summer time...LOL!!!
