Easy and delicious low-carb chicken recipe

I made this for my family last night...they scarfed it up!


Baked Chicken and Mushrooms

This is a new family favorite...I make 12 servings (there are 8 of us including a 15 yr old boy)...the recipe is for 8 servings.

8 medium chicken thighs (boneless and skinless with all visible fat removed)
1 package sliced fresh mushrooms
1/2 yellow onion (diced)
2 tbs EVOO
1/2 cup white wine
1/2 tsp dried oregano
salt and pepper to taste

Spray a 9x9 baking pan with pam and place the thighs in smooth side up. 
Pour the wine over the top
Layer the mushrooms over the chicken
Sprinkle the onions over the mushrooms
Sprinkle the oregano evenly over everything
Salt and Pepper
Add the olive oil over everything distributing it evenly.

Bake at 350 for about 20 min covered with foil...remove foil, baste the dish with the pan juices and bake for another 25 min, basting two more times...

This is juicy and easy for bandsters to eat.

It is very quick to put together too.  I had a thigh and some mushrooms today for lunch and it was still moist...
I need to get back into recipe development...my husband and I owned a restaurant for 12 years and that was my favorite part of the business...I posted a recipe for lentil soup on my profile too...it comes out very thick so is ok for us to have for a meal.  I had that yesterday for lunch and I wasn't hungry till dinner at 6pm..
I need to finalize plans for our trip to California in early July...my FIL is turning 90 and I believe our family is having a party for him on the 9th, the week before the conference.  I would love to meet you too...the meetings just seem to fall on our away weekends.  This weekend we are at Chelan...Will let you know about conference as soon as I get the dates for our trip nailed down..

Why, oh WHY must I be allergic to mushrooms?  Any suggestions for a flavorful veggie substitute in this recipe?  The other ingredients alone sound amazing!  Mushrooms add such a richness to the sauce that is hard to duplicate with other veggies...maybe zucchine (sp.)?

I would just leave them out, though the chicken smells wonderful with basil-mushroom-garlic aroma...Zucchini is too watery..peppers need to be seared on high heat...frozen artichoke hearts might work, but I would leave out the oregano.

Yeah, I think I'll do that...and OMG I know, the smells are SO good together.  I used to eat mushrooms on everything and developed an adult allergy to it about 7 years ago.  I was devastated!  Thanks Steph.

Still with my lapband with no plans for revision. Band working well since
