Rich Herb and Cheese Frittata

10 eggs or egg substitute (eggs should be pre stirred)
1/2 cup shredded cheese (any kind you like)
Fresh herbs ( I cut chives and parsley from my garden, sometimes basil)
1 sliced tomato
Diced fresh veggies, whatever you have, I prefer red,yellow,gr bell pepper and mushrooms.
Diced ham or bacon
1T olive oil
1T butter
salt and pepper

heat oil and butter, sautee peppers till soft,add cooked meat.  Pour in eggs,herbs, and seasoning. ONLY SCRAMBLE HALFWAY. Take skillet off heat sprinkle cheese over top and arrange tomato slices symetrically on the top, as if putting pepperoni on a pizza. Put entire skillet in oven, 375 degrees, until it puffs up, cheese melts and turns very slightly brown on edges.

Cut like pie wedges. I serve this for dinner with a big Spinach salad. Also great to reheat or grab and eat cold on the go. No fork required!

*Tip

I buy bell peppers in every color at the farmers market in big quantities. I cut them all up at once in long strips and freeze them in a big bag. I do this with onions too. I use them ALL the time for quick chicken fajitas, my texas hash, or frittata!

Mine is a simple taco salad which I LOVE. I lived on this when I first got banded.

Extra 96+ Lean ground beef or turkey  (cook with garlic, pepper, and adobo is you have)

chopped tomato
Lettuce (what ever kind you can stomach)
Chopped onion
Chopped grilled peppers

and a chopped avacado

Mix salad with lemon juice, salt, pepper, garlic

portion out salad and top with portion of meat.  Throw on a little hot sauce if you like.

I've done this sort of thing but never with adobo sauce...I need to try that! mmm

Cilantro and lime r good too!
