What I'm Eating - Monday

Share today's menu with us! Everyone can join in, no matter what phase of eating you're in - liquids, mushies, solids, etc.

Breakfast: Skim Latte, fat free cottage cheese w/ pineapple

Lunch: Chicken Waldorf Salad (light mayo, raisins, celery, walnuts)

Dinner: Baked Tilapia w/ lemon breadcrumbs

Snacks: Greek yogurt, roasted chick peas, baby carrots

You can't go back and make a brand new start, but you can start from now and make a brand new end.

I'm thinking about eating something really good....starting my pre-op diet on Wednesday...LOL

I love cottage cheese but my favorite is the lactose free kind or fiber one cottage cheese.. I don't like the fat free one as much... I'm werid

Breakfast: So far coffee not sure.. maybe oatmeal?
Lunch: Ham and cheese roll ups with a side of tomatoes
Dinner: Chicken with veggies..

Gym .. either body pump or spin

Snack: apple

Disclaimer: this is what I had PLANNED to eat for today. See my "sick" post above.

I have a feeling that what I actually eat today will be vastly different. So far all I can stomach is my cottage cheese and about 1/4 cup of the cottage cheese. I think it will be mostly yogurt and soft foods for the rest of the day today. This sore throat is killing me.

I definitely think it will be soup for dinner. The Tilapia can wait.

Great choices!  I have been craving fish again...might have to do Parmesan-Crusted Tilapia this week sometime.  Yes, between the 2 of us this post will be done daily.  I am on here every day for accountability anyway, so I don't mind! :)

Hi Amy!  Here is the recipe (it is from Eggface's website):

Parmesan Tilapia

You can use this topping on any white fi****'s so simple and good.

1/2 cup fresh grated parmesan cheese
3 tablespoons mayonnaise (I use FAGE 0% Greek Yogurt instead)
1/4 teaspoon dried basil
1/8 teaspoon onion powder
2 lbs tilapia fillets
1/4 cup butter, softened
2 tablespoons fresh lemon juice
Salt and pepper

Preheat oven to 400 degrees. Grease baking pan. In small bowl, mix together the cheese, butter, mayonnaise and lemon juice, basil, onion powder, salt and pepper. Arrange fillets in a single layer in prepared pan. Bake for 20 - 30 minutes until done and flaky. Remove fillets from oven and cover them with the cheese mixture on top side. Place under broiler for 2 minutes or until the topping is browned. Be careful not to overcook the fish. 8 servings.

Oh, Mondays....lol.  I didn't make it to the Produce Store or my Butcher this weekend as planned, so options today were limited. Definitely going after work!

Early: 1.5 Scoops BSN Lean Desserts Protein Powder - Whipped Vanilla Creme flavor, 3/4c unsweetened almond milk, 1/2 small banana, 1T SF Strawberry Syrup

B:  Hi/Lo Protein Cereal - Maple Pecan flavor, 1/2c FF milk, 2T GG Fiber Sprinkles

S: 1/4 Baked crisp Lavash Wrap, 1/4c Greek Yogurt with dill, garlic, pepper

L: 1/2c tuna,
1/5th of an avocado, sprinkle of cheddar, & LF Balsamic Italian

S:  5 BBQ Soy crisps, 1oz Aged Reserve White Cheddar

D: 2 leftover Homemade Turkey Meatballs, 1/3c ricotta, 1/4c LF spaghetti sauce, 1/8c shredded mozarella, small salad if still hungry

Dessert: Leftover Shelly's Protein Ice Cream - Chocolate Peanut Butter flavor (still have a hard time acceptimg this is GOOD for me LOL)
