meat loaf- soft food??
Hi All,
My Post OP plan is moving on to the soft food phase (yay)! I am trying to plan what to make or cook or what can be eaten, but it is not that easy- I want to bring some variety in as well! So I know now that soft food should be anything that can be mashed with a fork (correct me if I am wrong)- would you think meat loaf is soft food? Do you have any other great ideas/recipes?
Thank you!Evelyn

Wished I had though about meat loaf during this phase, but as long as you can keep it moist it should be fine. I always prepare a sauce for my meat loaf and will share this recipe with you in hope that it will help you
1 can tomato sauce (reduced sodium)
add water to thin out and not be so acidic
1 green pepper cut in small pieces
cook this sauce til peppers are very soft. I put this sauce over what I eat to keep the meat moist and easiser to go down.

I made little 2oz meatloaf cups post op (meatballs, essentially) and they came in very handy. My bites were the size of a pea and it would take me 20 min to eat one. I used bread crumbs, an egg, a bit of olive oil to moisten and seasoned as I usually do. I baked them in mini muffin pans and I would warm one up with a 1/4 cup of marinara...made a good meal and they keep well in the freezer.

Evelyn,
When I make meat loaf, I serve the 'ends' to my husband as they are usually drier -- then, I eat a bit of the middle, and if it looks too dense, I add a few tablespoons of tomato sauce or ketchup.
My favorite thing is to have some of the Safeway brand Tomato Basil bisque soup on hand -- I use it like a gravy for my meatloaf.
I relied heavily on the Baked Ricotta recipe --- it is like lasagna without the meat/noodles
1 cup Low-fat Ricotta
1/2 cup parm cheese grated
1 egg
salt, pepper, garlic, italian seasonings -- all to taste
Top with marinara sauce and some shredded mozzerella --- bake at 400 - 425 for about 20 minutes
I ate about 1/4 cup at a time
I think that you could add some ground beef into the marina if you wanted to.
