Since it is St Paddy's Day and I am a wee bit 'o Irish (along with a lot of other stuff) and married to an Italian (for over 44 yrs) I thought I would share our family's spin on corned beef and cabbage!

My daughter prepares her corned beef in the oven.  She prepares a glaze of dijon and honey rubs it all over the brisket.  The brisket is placed in a baking dish,covered with foil and cooked on 300 degrees for about 3-4 hours.  We slice it thin and it is fork tender.  Bandsters should cut through the grain...we don't want any Pbs around our house!

For the cabbage, we take a head of cabbage and cut it as if we are making cole slaw.  We chop an onion and a couple of cloves of garlic and saute in a non-stick skillet in a couple of tablespoons of EVOO until translucent.  Add the cabbage, salt and pepper to taste, saute until slightly browned (caramelized) then cover on low heat until tender and reduced to one half.

Our potatoes are pretty traditional; red potatoes, cut into small pieces, cooked until tender and then rough mashed with a bit of half and half, a tablespoon of butter, salt and pepper to taste.

Even the kids enjoy this because of the traditional fun holiday...Everyone wears something green to dinner and the kids make up limericks!

 Your menu sounds yummy & not too difficult, even for the average cook!  Isn't it great to get the kids involved, too and pass down those family traditions!  Happy St. Patricks Day to ye!

Always sounds funny to us Brits! In Ireland the meat you eat for S. P Day is a bacon joint! Corned beef to us is a very soft, re-formed meat, nothing at all like the American version. Ours comes either in a tin or ready sliced from the supermarket and is so soft you can cut it with a teaspoon!

I was told that the first Irish to go to the US couldn't get the bacon joints they wanted (no idea why!) and so used  cuts of beef instead.

Happily banded since May 2006.  Regain of 28lbs 2013-14.  ALL GONE!

But some has returned! Up to 175, argh! Off we go again,

 I made Corn Beef and Cabb for my grandmother in her slow cooker - she said it was good. 
I could never acquire the taste for Corned Beef or Cabbage and now I cannot eat potatos - so needless to say we aren't doing anything irish today. But i did wear green to the gym!
