I don't know why I'm wide awake at 6 a.m. this morning but it is what it is. 

Here's my day:

Early:  Coffee
Brunch: Having brunch with my band babes at a local restaurant.  
D:  Leftover meatballs and pasta sauce.

Here's a deliciuos twist on meatballs:
Meatballs:
1 pound ground turkey
1-1/2  teaspoons of powdered beef broth (the soup broth concentrate loose powder)
1 egg
1 tablespoon worcester sause
1 tablespoon minced garlic
1/2 teaspoon black pepper
1/4 cup bread crumbs
1 teaspoon steak sauce
Gravy:
1 cup beef broth
3 tablespoons corn starch
black pepper to taste

Mix all ingredients for meatballs until well blended. Form into desired sized meatballs and place each meatball on oil sprayed baking pan (cookie sheet works) and bake in oven on 375 degrees for 30 minutes or until meatballs are done. In medium sized skillet combine all gravy ingredients and boil (whisking mixture frequently****il gravy thickens. Place done meatballs in the gravy and they're done. Serve with mashed potatoes (creamed with skim milk, chicken broth or buttermilk which is less calories than whole milk) and a vegie of your choice. I like spinach or brochilli well cooked. This meal is good for those on solids and mushies because the meatbals are soft.

Breakfast: Coffee, greek omelet (feta, spinach, yellow tomatoes), very berry 3.5oz greek yogurt

Lunch: Fish with asparagus

Dinner: Warm spinach salad with Gorgonzola cheese, walnuts, dried fruit, turkey tips with a warm bacon dressing-YUM!

Snacks: cashews, cheese, fruit
