Avocados
So I've recently discovered that after a lifetime of not eating avocados, I actually love them. This comes at a good time, because 14 months after surgery, I'm starting to get really bored with all my standard foods, like turkey chili, Egg Beaters and my regular breakfast of Greek yogurt with granola.
Any favorite ways of preparing avocados that you'd like to share? I realize that they're high in fat, but I figure they're not bad in moderation. And any other (non-avocado) dishes that helped you break out of boredom would be appreciated as well!

My very favorite way to eat avocadoes (but I haven't tried this since banding) is to cut one in half, remove the seed. Fill the seed pocket with lemon juice, sprinkle garlic salt over the whole thing and eat it with a spoon. Oh so good.
2nd favorite is to mash an avocado with pace picante sauce and garlic salt.. effectively making guacamole. Instead of using fried chips, I take low carb tortilla chips or some other very low carb flat bread, cut it into pieces and bake in the oven till crisp. Or use things like baby carrots, celery sticks, etc. to dip.
Neither one is very low calorie, but for a very occasional treat....

It is pretty high in calories. When I have tuna salad for lunch I always have a side of avacado. Those 2 are the perfect companions in my book.
When we go out to breakfast I always order the Denver omlette with a side of avacado ( it is always huge) Special treat and hang the calories ( thank goodness for my band that I cannot over eat)

Avocados are HEAVENLY. And yes, they are high in fat but that does not make them evil. Your body NEEDS fat and the kind of fat it needs is exactly what youwill find in avocados, nuts, lean meats, fish etc. Other than a delicious guacamole, my favorite way to eat an avocado is to slice it thinly and roll it up with a slice of turkey and some strips of red bell pepper. It's magically delicous!
I also chop them up in salads and on top of chili. And pre-band, one of my favorite breakfasts was an English Muffin toasted and topped with tomato, avocado and a slice of melted Havarti cheese. As soon as I'm able to have some carbs again, I'm thinking that would be delicious with a whole-wheat sandwich or bagel thin and maybe a slice of turkey to add some protein.
