Currently I am on my own (my husband is away) and so I have trouble really wanting to dig in and "cook" a meal - what do others of you out there do in this situation and what type of meals do you eat?  Thanks to all who share!

my husband is gone on business travel about 2wks a month, no kids.

i keep frozen scallops / shrimp / talapia / mahi mahi in the freezer @ all times.   i either grill them & add to salads or grill up some fresh veggies - maybe some couscous type of grains.

i also make a lot of soups:  lentils / split pea / turkey or chicken chili.....freeze in cup servings & just defrost.

I cook chicken breas or turkey burgerst for the whole week or month and freeze it. I also freeze any leftover. I cut up onions and also freeze them. while making boiled eggs for breakfast I boiled  more than what im going to eat and put the rest in the frig.

Why my husband is away I tend to eat things I wouldn't make when he is at home, either because he doesn't like the food or it isn't something that would be enough of a meal for him.

Last week I broiled a piece of salmon that was leftover from a larger pack. I also like to make salmon patties with one of those little pouches of salmon (like the tuna pouches). Sometimes I'll order a salad for lunch and then eat the remainder for supper.

how about some grilled chicken breast ( probably can do with steak) ..and use the left overs for a salad? maybe even chicken salad too in lettuce wraps ..can do the same with egg salad and tuna.....a pot of chilli and eat it for lunches ....even some chicken parm (sauce and cheese) on the grilled chicken breast ....

This is my worst downfall.  I am single with no kids so it is just me and I don't cook.  I lived in my apartment for two years before I knew that the oven and stove didn't even work.  I have learned the hard way that you have to eat more than one thing at a time.  I am working hard on getting out of this habbit.  I tend to eat lots of soup with crackers, this is slider foods so I eat more that I should.  I am working on doing meat and veggies.  I plan to buy the small cans of veggies, I guess they are the 1/2 cans and then getting pre cooked meats that I just have to heat up in the microwave.
Whatever you do keep it balanced, that way you won't end up overeating.

I don't seem to do well the deli meat...always seems to get stuck for some reason... I am thinking frozen chicken and beef fajita strips and chicken breast, stuff like that, I found some meatloaf the other day that was good. I don't remember the brand though.
